MIX IT UP. If you want to change up your hamburgers a bit try mixing up a creative mayonnaise for them. Start with about two cups of good mayonnaise and mix in 2 tablespoons of stoneground mustard and fresh chopped cilantro to taste. Or skip the mustard and try adding only your favorite fresh chopped herb, such as basil or tarragon, to 2 cups of mayonnaise.
BREAKFAST HAM & CHEESE SANDWICH RECIPE
This is a crowd-pleasing recipe for breakfast.
12 eggs8 tablespoons of whipping cream or milk1 stick butter melted1 T. poppyseed1/4 cup chopped onion1/4 cup mustard1/4 cup mayonnaise3 packages Hawaiian buns1 lb sliced ham1 lb swiss chees slices
Mix the equal parts of mustard and mayonnaise together and set aside. Whisk the eggs with the whipping cream or milk to make scrambled eggs. Add salt and pepper to the mixture. The goal with the eggs is to make flat crepes of eggs that can be layered into the sandwich. Heat a flat pan and melt a lightly coating of butter. Pour enough of the mixture to cover the pan evenly and cook until set. Repeat this procedure until all of the eggs have been cooked. Melt butter and mix poppyseed and onion into the melted butter. Prepare an assembling line for putting the sandwiches together. For each sandwich - cut the bun in half. Put a dollop of the mustard/mayo on one side and the butter combination on the other. Layer shaved ham, then egg, then cheese and fold sandwich together. Put sandwiches on a cookie sheet, cover with tin foil and bake in a 350 degree oven until hot - approximately 45 minutes.
BEST NACHOS RECIPE - Artichoke and Black Bean Nachos
1 (9-ounce) bag of red or blue corn tortillas
1 (12-ounce) can black beans, drained and rinsed
1 (12-ounce) jar marinated and quartered artichoke hearts
1 (8-ounce) bag pre-shredded Monterey Jack Cheese
5 plum tomatoes, seeded and diced
I cup sour cream
1/2 bunch scallions, cut into 1/4 inch thick slices
On heatproof serving platter, layer tortillas to cover the surface of the platter. Top with 1/3 of the black beans. Place 1/3 of the artichokes on top of the back beans. Sprinkle some of the cheese and the tomotoes on top of the artichokes. Repeat the layers 2 more times. Place under the broiler until the cheese melts. Garnish with sour cream and chopped scallions.
